THE CELLAR

Our cellar, with the winemaking and aging departments (completely underground) and relative bottling room, covers a total area of over 200 m 2. With a total production of about 1,100 hectoliters of wine that can be broken down into stainless steel / 316 vats and 50-hectolitre Slavonian oak barrels. Here tradition and technology meet to guarantee a wine of scrupulous oenological care: automated bottling systems, air conditioning systems that require monitoring that guarantee a constant temperature and the use of natural substances to give the wine a correct and refined appearance.

__ The Wine

THE WINE

Our production consists of four labels for a total of 20,000 bottles per year. Our first production of Il Brunello was after the 1985 harvest, which gave us about 21 hectoliters of quality wine for a total of 2,800 bottles. The 1990 harvest saw the production of the first “Vigna Cerbaia Vintage” and Rosso di Montalcino DOC, which comes from the same grapes as Brunello, five months in steel, one year of aging in Slavonian oak barrels and several months decanting in the bottle. With our "Vigna Cerbaia" and "Cerbaia" we have the more traditional type Brunello: it is an intense ruby red wine, tending to garnet after aging, with a characteristic aroma, intense, dry flavor. The composition of the soil and the location give a structured classic detail: nuances, rich bouquet of violets, undergrowth and vanilla, full body and velvety texture. It is finer and more suitable for long aging, it goes well with roasts, game and cured meats. It is an excellent meditation wine.

__ The Oil

THE OIL

The production of Cerbaia oil is not very abundant, but it has an excellent quality: the 400 plants extend for about 0.5 hectares and produce one of the best DOP extra virgin olive oils in the area. The harvest takes place by hand and the pressing takes place cold at the local oil mill. Extra virgin olive oil has always played an active role in human health: it is rich in polyphosphates that delay the aging process and is essential for protecting oneself from some cardiovascular diseases.
